VLCD Day 22

So over the weekend I had an entire cauliflower, blueberries and a whole egg plus 3 whites which are on my friend's list of foods, but are not on the original protocol so I was concerned about my loss, but I wanted to eat as close as possible to what my friends and family were eating, without going completely off protocol, so I figured I would deal with whatever the results turned out to be. Oh ya and TOM came yesterday, so I thought that might stall me too.

Anyway, I am down 2.2 lbs over the past 4 days (which isn't much on average, but at least it's down!) so I am 154.5lbs with a BMI of 29.18 (overweight). I'll try to stick with only foods on the protocol and wait until P3 for the cauliflower. But if you're on P3 you should check out Your Lighter Side she has lots of amazing recipes with cauliflower and zucchini for pizza, breadsticks, chips, lasagna and all sorts of yummy stuff! I can't wait for P3! Actually I can wait until I lose about 10 more pounds, or until my birthday, whichever. I have to be off P2 by my birthday so I can make myself some P3 chocolate cake! It's my 30th birthday, I have to have cake!

EDIT:Okay, I am going to try something that I hope will be delicious and okay for supper.... pancakes! I found that one egg and one scoop of protein powder has the same protein as the other protein servings so if you mix them together with a little water and maybe some cinnamon and stevia.... I'll let you know haw they turn out!

So I used 1 scoop of vanilla protein powder, one egg, 1 Tbsp of skim milk a dash of cinnamon and a sprinkle of stevia. I cooked them like pancakes. They were a little dry and could've used more stevia, but were still tasty. Next time I would flip them the second bubbles begin to form. Now I just need to figure out my veggie for supper. Maybe some salad, hmm, lettuce or spinach...

Okay I never made a salad. I found this recipe and am waiting on my spinach chips right now to eat while I watch the Glee season finale. I'll let you know how they are when they come out. It's starting!

So Glee was kind of a bummer, but the spinach chips were soooooo good. I know that olive oil isn't on protocol, I just sprayed a bit on and sprinkled on salt, paprika and garlic powder. They were so good I made them again without the oil and they didn't end up as crunchy. Apparently coconut oil is okay and I'm not sure what I used way back a few weeks ago was coconut oil, but apparently you can buy a coconut oil spray, so I might try to find that next time. Anyway, better head to bed!
